Hill Country Harvest Beef & Pork Rib Tray with Pears, Pecans, and Grapes
Ingredients:
- 2 lbs beef ribs
- 2 lbs pork ribs
- 1 lb pork or beef sausage, sliced
- 1 cup beef broth
- 2 pears, sliced
- 1 cup grapes, halved
- 1/2 cup pecans, chopped
- 2 stalks celery, chopped
- 1 cup breadcrumbs (or crumbled bread)
- Salt and pepper to taste
- 1 tbsp olive oil
- 1 tbsp fresh thyme (optional)

1. Preheat Oven |
Preheat your oven to 325°F (163°C). |
2. Prepare the Pork Ribs |
Season the beef and pork ribs generously with salt and pepper. Heat olive oil in a large skillet over medium-high heat. Sear the ribs on all sides until browned. Remove from skillet and set aside. |
3. Cook the Sausage |
In the same skillet, cook the pork sausage slices until browned and cooked through. Remove and set aside with the ribs. |
4. Prepare the Tray |
In a large roasting tray, arrange the seared beef and pork ribs in a single layer. Scatter the cooked sausage slices around the ribs. |
5. Add Vegetables and Fruit |
Add the chopped celery, sliced pears, and halved grapes to the tray. |
6. Make the Crumb Mixture |
In a small bowl, mix the breadcrumbs with chopped pecans and a pinch of salt and pepper. Sprinkle this mixture evenly over the ribs and sausage. |
7. Add Beef Broth |
